HomebuiltHelp videos are useful
Growing up on a farm in KS gave me all the basic skills I need for sheetworking, welding, engine's etc. I haven't been to any real courses or seminars and really don't think the project's suffered for it. The Zenith photo-guides and blueprints contain everything you need to know to build the airframe.

I did buy the "wiring your airplane 101" dvd from homebuilthelp.com, and found it worth the $25. Quite a bit of it was very basic, really for the total novice, but there was some info on aviation-specific parts & procedures I found useful. If you don't know anything about wiring, this would be a great help.
